Iceberg Lettuce

To keep a head of Iceberg Lettuce fresh and crisp follow these simple steps:

1. Remove the stem by hitting it hard on the counter or table. It just pops right out.
2. Run cold water into the head where the stem came out. It doesn't take much time, just enough to get water all through it to clean off the lettuce.
3. Set the head stem side down on a clean towel to let all the water drain out.
4. After a few minutes, get 3-4 paper towels and wrap it around the head of lettuce.
5. Wrap the paper towel-covered head of lettuce in a light weight kitchen towel or flour sack. I use these towels. They're heavier than cheese cloth, but not as heavy as terry cloth dish towel.
6. Use the plastic bag you get from the produce department to put the covered head in. Try to get as much air out as possible and close with a twist tie or clip.

Your lettuce will stay fresh and crisp for over a week.
