Soft Peanut Butter Cookies

1/2 cup butter, softened
1/2 cup butter flavored shortening
1 cup sugar
1 cup brown sugar
2 eggs
1 cup peanut butter
1 tsp vanilla
1 1/2 cups flour
1 tsp baking soda
1 tsp salt

Cream together butter, shortening, sugar, brown sugar, and eggs. Add peanut butter and vanilla. Sift together flour, baking soda, and salt, and then incorporate with creamed mixture.

Measure out tablespoonfuls of dough and roll into balls. Place about 3 inches apart on lightly greased cookie sheet and make a criss-cross pattern with a fork.

Bake in a pre-heated 375 oven for 8-10 minutes, until set; DO NOT OVER BAKE! Let rest for 2 minutes on cookie sheet before transferring to a wire rack to finish cooling.
