Zuppa Toscana

This recipe is very similar to what you would order at Olive Garden ~ delicious!

1/2 pound Italian sausage
1/2 pound pork sausage
2 large russet baking potatoes, cubed
1 large white onion, chopped
1/2 pound bacon, cooked and crumbled
2 cloves garlic, minced
2 cups kale or Swiss chard, chopped
2 cans chicken broth
1 quart water
1 cup heavy whipping cream
Shredded Parmesan cheese

Thoroughly mix the Italian and pork sausage. Patty out to 1/4 thickness on a baking sheet, and bake at 325 for 30 minutes, or until sausage is completely cooked. Drain on paper towels and cut into cubes.

Place onions, potatoes, chicken broth, water, and garlic in a pot. Cook over medium heat until potatoes are done. Add sausage, bacon, and salt and pepper to taste. Simmer for 10 minutes. turn to low heat, add kale and cream. Heat through and serve, topping with Parmesan cheese.
