Cooking Wine

I very strongly believe in the word of wisdom. I've never broken it. Not once (well, maybe, I used to drink caffeinated sodas...?) Not even when it comes to cooking. When I go to a restaurant and something I want is cooked in any type of alcohol, I'll order something else. I once bought a jar of pasta sauce with some type of wine in it. I felt so guilty that I threw it away.

I know that the alcohol is "supposed" to cook off. I still just can't bring myself to try it.

But I've found a solution! You can substitute Orange Juice for Wine in your recipes! I think the end result is delicious! Granted I can't (or won't) compare it to the real thing, but I've found a happy solution for all of us who are blessed/plagued with a word of wisdom conscience.

Could you also use broth (chicken, beef or vegi)? I've always been a little afraid of recipes that call for wine, so this is great!

I don't think the end result would be the same if you substituted with broth. OJ has the same sweet acidity that wine has.

Great tip! My mother-in-law got her degree in Home Economics and when she was in collage she said they did and experiment with different types of foods (mainly sauces like in a resturaunt) adding wine or alcohol to each one. They measured the alcohol content and each time there was ALWAYS a bit of alcohol left in the dish. Kind of interesting isn't it?
